Meal Prepping: My Top 3 Pan-Asian Inspired Recipes!

Hey girl, you're back! I'm so happy you enjoyed my first meal prepping blog post last week! As a “meal prep virgin,” I cooked very basic recipes on my first attempt, and I was successful! This time around, I'm raising the “steaks,” and prepping/sharing my three favorite go-to recipes for when my husband and I want some Asian flair on our menu! I’m NOT a Masterchef by any means…I’m just a regular mom who sometimes loves to cook extra yummy dinners for her family! If these recipes don’t “meat" your dietary restrictions or choices, please adjust as you find necessary! I hope they add a little extra flavor to your life!! Bon Appétit!


1. Korean Rice Bowl

Ingredients: (Serving size for 4-6 plates)

2lbs of lean ground beef

2 small spoons of minced jarred garlic

1 bunch of scallions chopped

1/4 cup of Bragg liquid aminos

2 teaspoons of sesame oil

1/4 cup of organic cane sugar

1/4 tsp of ground ginger

1/4 tsp of black pepper

1/4 tsp of crushed red pepper

A sprinkle of sesame seeds

Salt to taste

Served hot with white rice

Directions:

  1. In a skillet, heat the garlic and beef, cooking over medium heat until no longer pink.

  2. In a small bowl, mix together liquid aminos, sesame oil, organic cane sugar, ground ginger, black pepper, and crushed red pepper flakes. Then, pour it over the beef in the skillet and simmer it for two minutes.

  3. With a slotted spoon, serve the meat hot over white rice, and sprinkle chopped scallions, sesame as desired, and salt to taste!

2. Butter Chicken Curry with mushrooms and spinach

Ingredients: (Serving size for 4-6 plates)

2 tbsp of olive oil

2 small spoons of jarred minced garlic

2lbs of chicken breast strips cubed

Salt and pepper to taste

2 boxes of sliced mushrooms (10 oz each)

3 oz of baby spinach

2 cans of Simply Balanced simmer sauce for butter chicken curry

Served hot with brown basmati rice medley

Directions:

  1. Heat 2 tbsp of olive oil in a skillet with two small spoons of minced jarred garlic until lightly browned. Add the chicken that you’ve cut into cubes, cover the skillet with a lid, and cook on low medium heat until no longer raw. Season the chicken with salt and pepper as desired for flavor.

  2. Add the mushrooms with a little bit of olive oil, sprinkle a pinch of salt, mix and cover with a lid until slightly soft.

  3. Add the spinach, and mix until it turns dark green and softens.

  4. Pour two bottles of “Simply Balanced simmer sauce for butter chicken curry” into the skillet, mix, and let it simmer for two minutes.

  5. Serve hot with fresh brown basmati rice!

3. Teriyaki chicken with onions and peppers

Ingredients: (Serving size for 4-6 plates)

4 tbsp of olive oil

2 small spoons of minced jarred garlic

2lbs of chicken breast strips cubed

Salt, pepper, and garlic powder to taste

3 peppers sliced

2 onions sliced

3 oz of baby spinach

Soyaki teriyaki sauce as desired

Directions:

  1. Heat 2 tbsp of olive oil on medium heat with two small spoons of minced jarred garlic until lightly browned. Add the chicken that you’ve cubed, mix, and season with salt, pepper, and garlic. Cover skillet with a lid and cook on low to medium heat until no longer pink. Place meat to the side.

  2. In the same skillet (washed), heat 2 tbsp of oil, add the sliced peppers, sprinkle with a pinch of salt, and cook till almost soft. Add the onions, sprinkle a pinch of salt, and cook till desired crispness or softness. Drain any liquid.

  3. Using a slotted spoon, transfer the meat (not the liquid) to the veggies in the skillet, and add the Soyaki sauce. Simmer for two minutes. Mix in 3 oz of baby spinach, and cover on simmer until bright green and soft.

  4. Use a slotted spoon, and serve hot along side brown rice!
